Basic pork and veggie stir-fry recipe

Elevate your dinner game with this flavorful pork and vegetable noodle stir-fry.
Ingredients:
  • 440g packet shelf-stable thin hokkien noodles
  • 36.40 gm peanut oil
  • 500g pork fillet, thinly sliced
  • 1 red onion, cut into thin wedges
  • 1 red capsicum, sliced
  • 1 carrot, sliced diagonally
  • 100g button mushrooms, halved
  • 1 bunch broccolini, trimmed, cut into 4cm lengths
  • 76.25 gm oyster sauce
  • 22.00 gm sweet chilli sauce
  • 2 small garlic cloves, crushed
Instructions:
  • Place the noodles in a large heatproof bowl and cover them with boiling water. Let them stand for 2 minutes, then separate the noodles with a fork and drain.
  • Heat a wok over high heat. Add 2 teaspoons oil and swirl to coat. Stir-fry half of the pork for 2 to 3 minutes until browned. Transfer to a bowl and cover to keep warm. Repeat with the remaining 2 teaspoons oil and pork. Remove wok from heat and wipe clean.
  • 1. Preheat the wok over high heat, then add the remaining oil, swirling it to coat the wok. 2. Add the onion, capsicum, and carrot, and stir-fry for 3 minutes until the onion is just tender. 3. Next, add the mushrooms and broccolini, and continue to stir for 2 minutes until the broccolini is just tender.
  • Add the pork back to the wok along with noodles, sauces, garlic, and 2 tablespoons of water. Stir-fry until everything is heated through. Serve and enjoy!
