Crunchy almonds elevate this nutritious pork stir-fry.
Ingredients:
  • 1 x 100g pkt Blanched Almonds
  • 9.20 gm peanut oil
  • 500g pork fillet, thinly sliced
  • 1 red capsicum, deseeded, thinly sliced
  • 150g snow peas, trimmed, halved
  • 2 garlic cloves, crushed
  • 24.40 gm oyster sauce
  • 22.00 gm sweet chilli sauce
  • 20.00 gm water
  • Steamed low-GI Rice, to serve
Instructions:
  • Preheat a wok or large frying pan over high heat. Add the almonds and stir-fry for 5 minutes until golden brown. Transfer to a plate.
  • Heat up the wok with oil and cook half of the pork by stir-frying for 3-4 minutes. Transfer to a plate. Repeat the process with the remaining pork, ensuring to reheat the wok between batches.
  • Combine capsicum, snow peas, and garlic in the wok, stir-fry until tender crisp. Pour in oyster sauce, sweet chili sauce, and water, bring to a boil. Add back pork and almonds, toss to combine. Serve hot with rice.
