Pork and apple tray bake with cider

Whip up a quick and tasty pork dinner with clever shortcuts for a stress-free weeknight meal.
Ingredients:
  • 600g sweet potato, peeled
  • 2 red onions, cut into thin wedges
  • 165.00 ml apple cider
  • 62.50 ml fresh sage leaves
  • 4 (220g each) pork cutlets
  • 3 pink lady apples, quartered, cored
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Cut sweet potato into 8cm lengths, then into wedges. Place onion and sweet potato in a large roasting pan, drizzle with half of the oil, season with salt and pepper, and toss to combine. Add cider and roast for 30 minutes until almost tender.
  • Chop half of the sage leaves. Heat the remaining oil in a non-stick pan over medium-high heat. Season the pork generously with pepper, then sear each side for 1 to 2 minutes until golden. Plate the pork.
  • Gently mix in apple and chopped sage with vegetables in roasting pan. Place pork on top and roast for an additional 10 minutes, or until pork is cooked through.
  • Finish by delicately scattering the rest of the fragrant sage leaves on top. Present the succulent pork and sweet potato blend alongside the rich pan juices for a delectable experience.
