Savor the vibrant blend of pork and asparagus in a delicious stir-fry.
Ingredients:
  • 100ml sweet chilli sauce
  • 42.00 gm lime juice
  • 48.80 gm fish sauce
  • 650g pork fillets, trimmed
  • 500g fresh hokkien noodles
  • 45.50 gm peanut oil
  • 3 green onions, cut into 5cm lengths
  • 2 garlic cloves, crushed
  • 1 bunch asparagus, cut into 5cm lengths
  • 125g snow peas, trimmed
  • 100g water chestnuts, sliced
  • lime wedges, to serve
Instructions:
  • In a jug, mix sweet chilli sauce, lime juice, and fish sauce with a fork until fully combined.
  • Slice the pork thinly across the grain and arrange in a shallow ceramic dish. Pour half of the sauce over the pork and toss to coat evenly. Cover and refrigerate for 30 minutes, if possible. Reserve the remaining sauce for later use.
  • Place the noodles in a spacious heatproof bowl and pour boiling water over them. Let them soak for 2 minutes, then drain and gently separate the noodles.
  • 1. Preheat a wok over high heat until it's smoking hot. Add 1 tablespoon of oil and swirl it around to coat the wok. Add half of the pork and stir-fry for 2 to 3 minutes until it's sealed. Transfer the cooked pork to a plate. Repeat this process with the remaining oil and pork.
  • Heat the remaining 2 teaspoons of oil in the wok and add green onions, garlic, asparagus, snow peas, and water chestnuts. Stir-fry for 1 minute until asparagus is tender. Return the pork and any juices to the wok, then add the reserved sauce and noodles. Stir-fry for 2 minutes until heated through. Serve with lime wedges.
