Pork and Bamboo Shoots

Deliciously spicy bamboo shoot stir-fry with pork and Asian flavors.
Ingredients:
  • 1 tablespoon peanut oil
  • 1 (14 ounce) can thinly sliced bamboo shoots
  • 2 tablespoons peanut oil
  • 1 fresh red chile pepper, seeded and minced
  • 0.5 teaspoon crushed red pepper flakes
  • 3 ounces ground pork
  • 1 teaspoon Shaoxing rice wine
  • salt to taste
  • 2 teaspoons rice vinegar
  • 2 teaspoons soy sauce
  • 3 tablespoons chicken broth
  • 1 teaspoon sesame oil
Instructions:
  • In a wok over medium heat, warm one tablespoon of peanut oil. Add bamboo shoots and stir-fry until dry and fragrant, around 3 minutes. Remove from wok and set aside.
  • Turn up the heat to high and add the rest of the peanut oil. Rapidly sauté the garlic, red chile, and red pepper flakes in the hot oil until aromatic. Add the pork and stir-fry until fully cooked. Pour in the wine and season with salt to your liking.
  • Add the bamboo shoots back to the wok and sizzle them up. Mix in the rice vinegar, soy sauce, chicken broth, and add salt to your taste. Stir and cook for 1 to 2 minutes, so the flavors blend into the bamboo shoots. Right before serving, toss in the green onions and finish off with sesame oil. Take the wok off the heat and serve.
