Pork and ginger pot stickers

Delicious parcels with perfect dipping sauce for any party!
Ingredients:
  • 350g Pork Mince
  • 250.00 ml wombok (Chinese cabbage), finely shredded
  • 2 spring onions, thinly sliced
  • 2 tsp ginger, finely grated
  • 21.00 gm soy sauce
  • 24.40 gm oyster sauce
  • 1/2 tsp Chinese five spice
  • 40 wonton wrappers
  • 18.20 gm peanut oil
  • Coriander leaves, to serve
  • 2cm-piece ginger, cut into matchsticks
  • 60ml soy sauce
  • 40.00 ml rice vinegar
  • 10.00 gm caster sugar
Instructions:
  • In a large bowl, mix the pork, wombok, spring onion, ginger, soy sauce, oyster sauce, five spice, and season with ground white pepper to taste.
  • Lay a wonton wrapper on a clean surface. Add a generous teaspoon of pork mixture in the center. Moisten the edges with water. Fold one corner to the opposite corner, creating a triangle shape. Press to seal. Bring the remaining corners together in the middle and press to seal. Repeat process with the rest of the wrappers and pork filling.
  • Mix together ginger, soy sauce, vinegar, sugar, and oil in a small bowl to create the dipping sauce.
  • In a large frying pan, heat half of the oil over high heat until it starts smoking. Remove pan from heat. Arrange half of the dumplings at the bottom of the pan. Return to heat and cook for 2 minutes until the base is golden. Evenly pour 1/4 cup of water over the dumplings. Cover and cook for 3-4 minutes until dumplings are cooked through and water evaporates. Transfer to a plate. Repeat with remaining oil, dumplings, and 1/4 cup water.
  • Arrange the dumplings on a platter alongside the dipping sauce and garnish with fresh coriander leaves.
