Crispy homemade pot stickers filled with savory pork, ginger, and cabbage, fried and steamed for an irresistibly unique dumpling.
Ingredients:
  • 1 pound ground pork
  • 4 cloves minced garlic
  • 0.5 cup finely chopped green onions
  • 3 tablespoons very finely minced fresh ginger
  • 2 tablespoons soy sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 pinch cayenne pepper
  • 1.5 cups finely chopped green cabbage
  • 2.5 cups all-purpose flour, or more as needed
  • 0.75 teaspoon kosher salt
  • 1 cup hot water, about 130 -150 F (55-65 C)
  • 0.25 cup seasoned rice vinegar
  • 0.25 cup soy sauce
  • 6 tablespoons vegetable oil for frying, or as needed - divided
  • 8 tablespoons water for steaming, divided
Instructions:
  • In a mixing bowl, combine ground pork, green onions, garlic, ginger, 2 tablespoons plus 1 teaspoon soy sauce, sesame oil, and cayenne. Top with chopped green cabbage. Mix everything together using a fork until fully incorporated. Gently press down the mixture, cover with plastic wrap, and refrigerate for about an hour until chilled.
  • Combine 2 ½ cups of flour and kosher salt in a mixing bowl. Gradually add hot water while stirring with a wooden spoon until a shaggy dough forms. Transfer the dough to a floured work surface. Knead until smooth and elastic, about 3 to 5 minutes. If the dough is sticky, sprinkle with up to 1/2 cup more flour and continue kneading. Wrap the dough ball in plastic and let it rest for about 30 minutes.
  • After the dough has rested, divide it into 4 equal pieces. Set aside 3 pieces and focus on the first piece. Roll it into a small log the thickness of a thumb, roughly 3/4 inch. Cut the log into 6 equal pieces, then roll each into a thin 3 ½-inch circle on a lightly floured surface to create the pot sticker wrappers. Repeat the same process with the remaining dough pieces.
  • Dampen the edges of a wrapper with your wet finger. Add a small scoop of the ground pork mixture to the center. Fold up the sides and pinch them together in the middle. Then, pleat the remaining edges on one side. Lightly tap the potsticker to flatten the bottom and create a curve to stand in the pan. Place on a floured plate. Repeat the process with the rest of the dough and filling.
  • Combine seasoned rice vinegar and soy sauce in a small mixing bowl to create the flavorful dipping sauce.
  • In a skillet over medium-high heat, heat oil. Arrange 6 or 7 pot stickers flat side down in the hot oil. Cook until bottoms are golden brown, around 2 minutes. Add water and cover the pan quickly to steam for 3 minutes. Uncover, lower heat to medium, and cook until water evaporates and bottoms are golden and crunchy, for 1 to 2 minutes. Transfer to a warm serving dish and repeat with the remaining pot stickers. Serve with dipping sauce.
  • Serve and savor while it's hot!
