Ready in 30 minutes, this hearty pork dish with sweet whole kernel corn is a delightful meal!
Ingredients:
  • 2 tablespoons olive oil
  • 8 small red potatoes (about 1 lb), cut into 1/2-inch cubes
  • 1 pork tenderloin (about 1 lb), cut into 1/2-inch pieces
  • 1 jar (12 oz) seasoned gravy for pork
  • 1 can (7 oz) whole kernel sweet corn, drained
  • 4 medium green onions with tops, sliced (1/4 cup)
  • 1/8 teaspoon pepper
  • 1/4 cup chopped fresh parsley
Instructions:
  • Heat oil in a large nonstick skillet over medium-high heat. Cook potatoes for 10 to 12 minutes, stirring often, until golden brown. Add pork and cook for about 5 minutes, stirring frequently.
  • Turn down the heat to medium and add all the remaining ingredients except for the parsley. Cook for an additional 4 to 6 minutes, stirring occasionally, until the pork is no longer pink in the center. Sprinkle with parsley before serving.
