Elevate your dumpling experience with this flavorful and satisfying wonton soup recipe!
Ingredients:
  • 1L (4 cups) chicken style liquid stock
  • 500ml (2 cups) water
  • 21.00 gm light soy sauce
  • 20.00 ml shaoxing cooking wine
  • 3cm piece fresh ginger, cut into matchsticks
  • 1 long fresh red chilli, thinly sliced
  • 1 sweet corn cob, kernels removed
  • 2 green shallots, thinly sliced diagonally
  • 1 tsp sesame oil
  • 125.00 ml fresh coriander leaves
  • 300g pork mince
  • 20.00 ml fresh coriander, finely chopped
  • 21.60 gm hoisin sauce
  • 1 green shallot, finely chopped
  • 2 tsp fresh ginger, finely grated
  • 10.60 gm light soy sauce
  • 250g pkt wonton wrappers
Instructions:
  • Prepare a baking tray lined with baking paper. Mix together minced pork, fresh coriander, hoisin sauce, chopped shallot, ginger, and soy sauce in a bowl. Take a wonton wrapper and lay it on a flat surface. Spoon a generous teaspoon of the pork mixture onto the center of the wrapper. Moisten the edges of the wrapper with a water-dipped pastry brush. Fold the wrapper diagonally to seal the filling inside. Dampen one corner with water, then fold it over to meet the opposite corner, pressing firmly to seal. Transfer the filled wonton to the prepared tray and continue with the remaining wrappers and filling.
  • In a saucepan over high heat, bring stock, water, soy sauce, wine, ginger, and chili to a boil. Reduce heat to medium, add wontons and corn, and cook for 6 minutes until wontons are cooked through. Stir in the white part of shallot and sesame oil.
  • Divide the soup and wontons into serving bowls. Garnish with fresh coriander and thinly sliced green shallot tops.
