Satisfy your cravings with quick, flavorful smoked pulled pork and sweet caramelized pineapple nachos for the family. Ready in 35 minutes!
Ingredients:
  • 117.50 gm light sour cream
  • 42.00 gm lime juice
  • 440g can pineapple slices in natural juice
  • 1 brown onion, finely chopped
  • 10.00 gm ground cumin
  • 1 tsp dried oregano leaves
  • 1/4 tsp ground chilli powder, plus extra to serve
  • 375g packet pulled pork with smoky barbecue sauce
  • 1/4 small red cabbage, shredded
  • 170g packet original corn chips
  • 40.00 ml fresh coriander leaves
Instructions:
  • Mix together the sour cream and lime juice in a small bowl, then chill in the refrigerator until needed.
  • Drain pineapple, keeping the juice. Chop the pineapple. Heat oil in a large frying pan over medium-high heat. Sauté onion until softened. Stir in garlic, cumin, oregano, and chili for a fragrant minute. Lower heat to medium, add pork, barbecue sauce, and 1/2 cup of reserved pineapple juice. Cook until heated through and sauce thickens slightly. Keep warm in a covered bowl.
  • Sauté chopped pineapple until golden on both sides, about 2 minutes each. Transfer to a plate. Quickly toss cabbage in the same pan until it begins to wilt, approximately 1 minute. Remove from heat.
  • Layer corn chips in a serving dish. Top with pork mixture, cabbage, and pineapple. Add dollops of sour cream mixture. Sprinkle with extra chili powder and garnish with coriander. Serve promptly.
