Budget-friendly, low-fat rogan josh, ideal for easy weeknight meals.
Ingredients:
  • 36.80 gm rice bran oil
  • 125g pork steak
  • 1 large red onion, halved, thinly sliced
  • 2 carrots, finely chopped
  • 115.50 gm rogan josh curry paste
  • 400g can chopped tomatoes
  • 250.00 ml French-style dried lentils, rinsed
  • 200g baby green beans, trimmed
  • 62.50 ml fresh mint leaves, shredded
  • 2 tsp finely grated lemon rind
  • 62.50 ml Greek Style Yoghurt
  • Cooked basmati rice, to serve
Instructions:
  • In a large heavy-based saucepan, heat oil over high heat. Add pork, onion, and carrot. Cook for 10 minutes, stirring occasionally until onion is soft and mixture is starting to brown. Stir in the paste and cook for an additional minute until fragrant.
  • Combine fresh tomatoes, lentils, and 5 cups of cold water in a pot. Cover and bring to a boil. Reduce heat to low and simmer, stirring occasionally, for about 1 hour or until lentils are tender.
  • Place the beans in a heatproof bowl and cover them with boiling water. Let them stand for 2 minutes until just tender. Drain the beans and then refresh them in a bowl of chilled water. Pat them dry with a paper towel and cut them in half diagonally. Transfer the beans to a medium bowl and add mint, lemon rind, lemon juice, and yogurt. Stir well to combine all the ingredients, and season with salt and pepper to taste.
  • Fill serving bowls with flavorful lentil curry, generously spoon on bean salad, and serve alongside fluffy rice.
