Pork and pear tray bake

One-pan meal featuring heavenly pork and pear pairing.
Ingredients:
  • 500g sweet potato, cut into 2.5cm thick chunks
  • 2 red onions, cut into wedges
  • 2 pears, cored, cut into wedges
  • 56.88 gm Brand Pure Olive Oil
  • 4 pork cutlets
  • 62.50 ml shredded sage leaves
Instructions:
  • Preheat oven to 200°C (180°C fan-forced).
  • Combine your fresh vegetables and ripe pears in a roasting pan. Add a generous drizzle of 2 tablespoons of oil and mix well to ensure everything is coated. Spread the mixture in a single layer and roast in the oven for 20 minutes until perfectly tender.
  • While you wait, warm the remaining oil in a large heavy-based frying pan over medium-high heat. Trim any extra fat from the cutlets and season them. Cook each side for 2 minutes or until they turn a beautiful golden brown.
  • Take the pan out of the oven and generously sprinkle 2 tbsp of sage over the dish. Arrange the cutlets on top of the vegetables and continue roasting for another 20 minutes for medium rare or until desired doneness. Finish by sprinkling the remaining sage over the dish.
