Warm pork and pear salad

Whip up a refreshing pork and pear salad for a delightful summer meal.
Ingredients:
  • 500g pork fillet
  • 27.30 gm extra virgin olive oil
  • 2 buerre bosc pears, cored, thinly sliced
  • 1/2 x 180g bag baby salad leaf mix with beetroot
  • 57.50 gm walnuts, toasted, roughly chopped
  • 100g mild blue cheese, crumbled
  • 62.50 ml red wine vinegar
Instructions:
  • Drizzle 2 teaspoons of olive oil over the pork and season with salt and pepper. Heat a chargrill pan over medium-high heat and cook the pork, turning occasionally, for 7 to 8 minutes until browned and cooked through. Transfer to a plate, cover, and let it rest for 5 minutes before serving.
  • Cut the pork into thick slices.
  • Combine pork, pear, salad mix, walnuts, and blue cheese in a bowl. In a screw-top jar, combine vinegar, remaining oil, salt, and pepper. Shake vigorously. Drizzle the dressing over the salad and toss gently to combine. Serve and enjoy!
