Pork and pumpkin sausage rolls with spiced tomato sauce

Impress a crowd with delicious pork and pumpkin sausage rolls!
Ingredients:
  • 800g butternut pumpkin, peeled, cut into 2cm cubes
  • 72.80 gm extra virgin olive oil
  • 10.00 gm ground cumin
  • 1kg pork sausages, casings removed
  • 8 green onions, thinly sliced
  • 82.50 ml finely chopped fresh coriander leaves
  • 3 eggs
  • 4 sheets frozen puff pastry, partially thawed
  • 12.00 gm sesame seeds
  • 240g salad leaves, to serve
  • 1/2 small red onion, thinly sliced, to serve
  • 2 garlic cloves, crushed
  • 1/2 tsp dried chilli flakes
  • 3 x 400g cans whole peeled tomatoes
  • 16.00 gm brown sugar
  • 2.40 gm sea salt
  • 62.50 ml finely chopped fresh coriander leaves
Instructions:
  • 1. Preheat the oven to 200C/180C fan-forced and line 3 large baking trays with baking paper. 2. Mix pumpkin, oil, and cumin in a bowl, ensuring all pieces are coated. 3. Spread the pumpkin in a single layer on one of the prepared trays and season with salt and pepper. 4. Bake for 15 minutes until golden and tender. 5. Allow it to cool for 15 minutes before serving.
  • Combine sausage meat, onion, coriander, and 2 eggs in a large bowl, mixing thoroughly with your hands until well combined.
  • Lightly beat the last egg left. Lay down one pastry sheet on a flat surface. Leaving a 1cm border, delicately spread 1/4 of the sausage mixture on the pastry. Add 1/4 of the pumpkin on top. Fold the pastry over to wrap the filling. Place the roll seam-side down on the prepared tray. Repeat the process with the remaining pastry, sausage mixture, and pumpkin. Brush the top of each sausage roll with the beaten egg. Sprinkle sesame seeds on top. Bake for 30 to 35 minutes until the pastry is beautifully golden and puffed, and the filling is cooked through.
  • While waiting, prepare the Spiced Tomato Sauce: Heat oil in a medium saucepan over medium-high heat. Add garlic and chili and cook for 30 seconds or until fragrant.
  • Combine tomatoes, sugar, and salt in a pot and bring to a boil. Reduce to medium heat and simmer for 10 minutes until slightly reduced. Remove from heat and stir in coriander. Use a stick blender to blend until smooth. Return to medium heat and simmer for 5 minutes until slightly thickened. Cut each sausage roll into three pieces. Serve with Spiced Tomato Sauce, salad leaves, and red onion.
