Delight your family with this tasty pork and tofu stir-fry.
Ingredients:
  • 5.00 gm cornflour
  • 127.50 gm chicken style liquid stock
  • 20.00 ml Chinese rice wine
  • 18.20 gm peanut oil
  • 400g pork mince
  • 32.40 gm hoisin sauce
  • 3 garlic cloves, crushed
  • 4cm piece fresh ginger, finely grated
  • 1 long fresh red chilli, thinly sliced
  • 600g silken firm tofu, drained, cut into cubes
  • 2 green onions, thinly sliced diagonally
  • Steamed jasmine rice, to serve
Instructions:
  • Pour the cornflour into a jug, then blend in the stock and wine until the mixture is smooth and well combined.
  • Preheat a wok over high heat, then add oil and swirl to coat. Stir-fry the mince for 3 minutes until browned. Add hoisin sauce, garlic, ginger, and chili. Stir in the stock mixture and bring to a boil. Add tofu and simmer for 1 to 2 minutes until the sauce slightly thickens.
  • Serve fluffy rice in bowls, generously layer with savory mince mixture, and finish by delicately sprinkling with fresh onion.
