Pork cutlets with brown lentils

Elevate pork cutlets with cherry tomatoes, zucchini, and lentils for a delicious and speedy meal.
Ingredients:
  • 4 pork cutlets
  • 18.20 gm olive oil
  • 15g butter
  • 1 large zucchini, trimmed, thinly sliced
  • 3 shallots, trimmed, thinly sliced
  • 1 garlic clove, crushed
  • 400g can brown lentils, rinsed, drained
  • 60ml (1/4 cup) chicken style liquid stock
  • 250g punnet cherry tomatoes
  • 62.50 ml fresh continental parsley leaves
Instructions:
  • Season the pork generously with salt and pepper. In a large non-stick frying pan, heat half of the oil over medium-high heat. Sear the pork for 2-3 minutes on each side until golden brown. Then, transfer the pork to a plate.
  • In a pan over medium heat, melt the butter with the remaining oil. Add zucchini, shallot, and garlic, cook for 2 minutes until soft. Stir in lentils, stock, and tomatoes. Bring to a boil, then reduce heat and place the pork on top of the lentil mixture. Cover and cook for 5 minutes until pork is cooked through. Sprinkle with parsley before serving.
