Pork Medallions with Apple Cider Gravy

20-minute no-mess pork dish with apple cider gravy for a quick and delicious dinner.
Ingredients:
  • 1 lb pork tenderloin, cut crosswise into 1/2-inch slices
  • 1/2 teaspoon freshly ground pepper
  • 1/4 cup butter or margarine
  • 1 medium onion, chopped (1/2 cup)
  • 1 clove garlic, finely chopped
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 1/2 cup apple cider
  • 1/4 cup chicken broth
  • 1 tablespoon chopped fresh rosemary leaves
  • Fresh rosemary sprigs, if desired
Instructions:
  • Season pork slices generously with a mixture of 1/4 teaspoon salt and 1/4 teaspoon pepper. In a 12-inch nonstick skillet over medium-high heat, melt 2 tablespoons of butter. Cook pork for 2 to 3 minutes, flipping once, until fully cooked. Transfer the pork to a plate and cover to keep warm.
  • In the skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Sauté the onion and garlic for 3 minutes until tender. Mix in the flour until well combined. Slowly pour in cider and broth, cook for 1 minute until thickened. Add chopped rosemary, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
  • Top the pork with flavorful cider gravy and adorn it with fragrant rosemary sprigs.
