Impress guests with this simple yet elegant pork tenderloin in cherry sauce, perfect for entertaining or a busy weeknight meal.
Ingredients:
  • 1 pork tenderloin (1 to 1 1/4 lb), cut into 1/2-inch slices
  • 1/2 teaspoon garlic-pepper blend
  • 2 teaspoons olive oil
  • 3/4 cup cherry preserves
  • 2 tablespoons chopped shallots
  • 1 tablespoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, finely chopped
Instructions:
  • Season both sides of the pork with a fragrant garlic-pepper blend. In a 12-inch skillet, warm 1 teaspoon of olive oil over medium-high heat. Sear the pork for 6 to 8 minutes, flipping once, until it reaches an internal temperature of 145°F. Transfer the cooked pork to a plate and cover to ensure it stays warm.
  • In the same skillet, combine the remaining 1 teaspoon of oil, preserves, shallots, mustard, vinegar, and garlic. Stir well to incorporate any browned bits from the bottom of the skillet. Bring to a boil, then lower the heat and simmer uncovered for 10 minutes until the sauce reduces to about 1/2 cup. Pour the sauce over the pork slices and serve.
