Pork ramen soup

Make restaurant-quality pork ramen soup at home.
Ingredients:
  • 500g Pork Mince
  • 1 garlic clove, crushed
  • 2 tsp finely grated fresh ginger
  • 1l chicken stock
  • 21.00 gm soy sauce
  • 20g fresh ginger, extra, peeled, thinly sliced
  • 1 garlic clove, extra, thinly sliced
  • 2 x 85g pkts instant noodles
  • 1 carrot, peeled, cut into matchsticks
  • 100g snow peas, thinly sliced lengthways
  • 82.50 ml coriander leaves
  • 2 spring onions, thinly sliced
  • 1 long red chilli, thinly sliced, to serve
  • Lime wedges, to serve
Instructions:
  • Mix pork, crushed garlic, and grated ginger in a bowl. Season generously with salt and finely ground white pepper. Roll 2 teaspoonfuls of the pork mixture into a ball using your hands. Place on a plate and continue with the rest of the pork mixture.
  • In a large saucepan, merge the stock and 3 cups (750ml) water. Introduce the soy sauce, sliced ginger, and sliced garlic. Boil over high heat.
  • Lower the heat to medium and gently introduce the meatballs, cooking for 5 minutes or until they are perfectly cooked through. Next, introduce the noodles, carrot, and snow peas, allowing them to cook for an additional 2 minutes or until the noodles reach the desired tenderness.
  • Ladle the soup into individual bowls, then generously garnish with fresh coriander, sliced spring onions, and spicy chilli. Accompany with lime wedges on the side for a burst of citrus flavor.
