Transform leftovers into a delectable, time-saving dish.
Ingredients:
  • Leftover pork steaks (see note)
  • Leftover green beans (see note)
  • 1 small Lebanese cucumber
  • 1 small red capsicum
  • 1 large rice paper round
  • Plum sauce, to serve
Instructions:
  • Slice the leftover pork steaks, halve the green beans, cut the small Lebanese cucumber into sticks, and thinly slice the small red capsicum. Pour warm water into a heatproof bowl until half full. Dip a large rice paper round in water, place on a flat surface, and let it sit for 20 to 30 seconds until soft. Place a portion of the pork, beans, cucumber, and capsicum on one edge of the wrapper. Fold in the ends and roll up tightly to seal. Cover with a damp tea towel to keep moist. Repeat with remaining ingredients and rice paper rounds. Serve with plum sauce.
