Pork rice paper rolls

Impress guests with these pork rice paper rolls. Budget-friendly and low-fat, served with sweet chilli dipping sauce. Perfect for entertaining!
Ingredients:
  • 150g dried rice vermicelli noodles
  • 16 small round rice paper wrappers
  • 1 oak lettuce, leaves separated, washed, dried
  • 2 Lebanese cucumbers, halved, cut into thin strips
  • 125.00 ml mint leaves
  • 125.00 ml Thai basil leaves (see note)
  • 250g (2 cups) roasted pork, cut into strips
  • 90.75 gm sweet chilli sauce
  • 1 lime, juiced
Instructions:
  • Follow the instructions on the packet to soak noodles. Drain, then rinse in cold water and drain again.
  • 1. Fill a shallow dish halfway with warm water. Submerge 1 rice paper wrapper into the water until softened. Transfer the wrapper onto a work surface and let it sit for 20 to 30 seconds until pliable. Place lettuce at the edge of the rice paper, then add noodles, cucumber, mint, basil, and pork. Roll up the ingredients, tucking the edges to seal the filling. Keep the rice paper rolls moist by covering them with a damp tea towel. Repeat the process with the remaining wrappers and ingredients to yield 16 rolls.
  • In a screw-top jar, shake together sweet chilli and 1 1/2 tablespoons of lime juice until well combined. Serve the rice paper rolls with the delicious sweet chilli dipping sauce.
