Spicy pork loin rub with brown sugar, red pepper flakes, garlic, mustard, cayenne, cumin, and paprika for a delicious sweet and savory pork roast.
Ingredients:
  • 0.5 cup brown sugar
  • 1 tablespoon coarsely ground black pepper
  • 1 tablespoon kosher salt
  • 1.5 teaspoons garlic powder
  • 1 teaspoon dry mustard powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon dried thyme leaves
  • 1 (2 1/2 pound) boneless pork loin roast
Instructions:
  • Combine brown sugar, pepper, salt, garlic powder, mustard powder, ground ginger, onion powder, red pepper flakes, cayenne pepper, cumin, paprika, and thyme in a bowl. Massage spice mixture onto pork loin and tightly wrap in plastic. Refrigerate the pork in a 9x13-inch baking dish for 4 hours to overnight.
  • Preheat the oven to 350°F (175°C). Unwrap the pork, then place it back into the baking dish.
  • Roast the pork in a preheated oven until it's slightly pink in the center, about 50 minutes. Use an instant-read thermometer to check that the temperature reaches at least 145 degrees F (63 degrees C). Then, loosely cover the pork with foil and let it rest for 10 minutes before slicing.
