Tangy Filipino pork soup bursting with fresh tamarind, ginger, and tomato flavors in a rich broth. Easy to make and delicious!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 1 teaspoon salt
  • 1 (1/2 inch) piece fresh ginger, chopped
  • 2 plum tomatoes, cut into 1/2-inch dice
  • 1 pound bone-in pork chops
  • 4 cups water, more if needed
  • 1 (1.41 ounce) package tamarind soup base (such as Knorr®)
  • 0.5 pound fresh green beans, trimmed
Instructions:
  • In a skillet over medium heat, sauté onion in vegetable oil until soft and translucent, about 5 minutes. Season with salt to taste.
  • Combine the ginger, tomatoes, and pork chops in the pot. Cover and simmer over medium-low heat, turning the pork occasionally until nicely browned.
  • Add water and tamarind soup base to the pot. Bring to a boil, then lower heat and simmer until the pork is tender and fully cooked, approximately 30 minutes.
  • Cook the green beans until they are tender.
