Slow cooker pork tenderloin with Dijon sour cream sauce, served with mashed potatoes and roasted green beans. Tender, melt-in-your-mouth goodness.
Ingredients:
  • 1 tablespoon extra-virgin olive oil, or more as needed
  • 2.5 pounds whole pork tenderloins
  • salt and black pepper to taste
  • 0.25 teaspoon garlic powder, or to taste
  • 1 onion, chopped
  • 1 (8 ounce) package sliced fresh mushrooms
  • 0.25 cup white wine
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 2 tablespoons Dijon mustard
  • 0.25 cup sour cream
Instructions:
  • In a large skillet over medium heat, warm olive oil. Season pork tenderloins with salt, pepper, and garlic powder. Sear pork until browned on all sides, about 5-6 minutes. Transfer pork to a plate and set aside. In the same skillet, sauté onion and mushrooms until lightly browned and starting to soften, about 3-5 minutes.
  • Pour the rich, aromatic wine into the slow cooker and gently mix in the fragrant onion and savory mushrooms. Nestle the beautifully browned pork on top of this flavorful bed of vegetables.
  • In a bowl, mix mushroom soup, Dijon mustard, and sour cream. Spread the mixture over the pork. Cover the slow cooker and cook on Low for 7 to 8 hours, until the pork is tender and a delicious sauce forms.
