Pork with apple & red cabbage

Ingredients:
  • 4 (about 600g) pork midloin butterfly steaks
  • Salt & ground black pepper
  • 20g (1 tbsp) butter or margarine
  • 40.00 ml vegetable or canola oil
  • 1 tsp finely chopped fresh ginger
  • 2 small Golden Delicious apples, peeled, cored, cut into 5mm-thick wedges
  • 1/4 medium red cabbage, trimmed, shredded
  • 100g snow peas, topped
  • 1 orange, juiced
Instructions:
  • Season pork steaks generously with salt and pepper. In a large frying pan over medium-high heat, melt 2 teaspoons of butter with 1 tablespoon of vegetable or canola oil. Sear the pork steaks for 2-3 minutes on each side until they achieve a lovely golden color. Transfer the steaks to a plate and remove any excess fat from the pan using paper towels.
  • In a pan over medium heat, heat the remaining butter and oil. Add ginger and apples, cook for 3-4 minutes until apples are just soft. Stir in cabbage and cook for 1 more minute. Add the pork steaks, snow peas, and orange juice. Cover and cook on medium-low heat for 3-5 minutes until pork is cooked to your liking and cabbage is tender. Serve with the cabbage mixture on top of the pork steaks.
