Ingredients:
  • 400g green cabbage, shredded
  • 1 garlic clove, crushed
  • 1 green apple, skin on, cut into thin (julienne) strips
  • 80ml chicken stock
  • 30.00 ml red wine vinegar
  • 1 tsp shredded sage
  • salt and pepper
  • 4 pork cutlets, trimmed
Instructions:
  • In a large non-stick frying pan over medium heat, warm up 1 tablespoon of olive oil. Sauté the cabbage for 3-4 minutes until it begins to soften. Mix in the garlic, apple, stock, and vinegar. Cook for an additional 4-5 minutes, then gently fold in the sage. Season with salt and pepper to your liking.
  • As the cabbage mixture is simmering, warm a non-stick pan over medium-high heat. Coat the pork cutlets with a touch more olive oil, season with salt and pepper, and sear them for 3 minutes per side (in batches if needed) until beautifully golden and cooked to your preference.
  • Spoon the cabbage mixture onto individual serving plates and layer with pork cutlets. Pair with vegetables like sauteed beetroot or salad, if preferred.
