Ingredients:
  • 9.20 gm olive oil
  • 1 red onion, finely chopped
  • 1 medium granny smith apple, peeled, coarsely grated
  • 2 x 275g jars whole berry cranberry sauce
  • 40.00 ml red wine vinegar
  • 4 whole cloves
  • 82.50 ml currants
  • olive oil cooking spray
  • 580g pork cutlets
  • salad leaves, to serve
Instructions:
  • In a large saucepan over medium-low heat, sauté onion and garlic in oil until onion is soft, about 3 minutes. Add apple and continue to cook until apple is soft, about 2 minutes. Stir frequently.
  • Combine cranberry sauce, vinegar, cloves, and currants in a pan. Cook over medium heat, stirring often, until the cranberry sauce melts and everything is well combined. Reduce the heat to low and simmer, stirring occasionally, for 30 minutes until the mixture thickens. Remove from heat and let it cool.
  • Prepare the barbecue plate or chargrill by spraying it with oil and heating it over medium-high heat. Cook the pork for 5 to 6 minutes on each side until it is nicely browned and fully cooked. Serve the delicious pork with relish and fresh salad leaves.
