Pork Chops with Apple-Cranberry Sauce

Quick and delicious pork recipe ready in just 20 minutes.
Ingredients:
  • 4 pork boneless loin chops (3/4 to 1 pound)
  • 1/4 teaspoon coarsely ground pepper
  • 3/4 cup apple juice
  • 1/4 cup dry sherry or cranberry juice
  • 1 tablespoon chopped fresh or 1/2 teaspoon dried marjoram leaves
  • 1/4 cup sweetened dried cranberries
  • 4 medium green onions, sliced (1/4 cup)
  • 2 teaspoons cornstarch
Instructions:
  • Preheat a 10-inch nonstick skillet over medium-high heat coated with cooking spray. Season pork chops with salt and pepper and sear in the skillet until golden brown on both sides.
  • Add 1/2 cup of apple juice, sherry, and marjoram to the pot. Cover and simmer over medium-low heat for 5 minutes. Then, mix in cranberries and onions. Continue cooking for 3 to 5 minutes, flipping the pork once, until it is slightly pink in the center.
  • Whisk cornstarch with 1/4 cup apple juice until smooth. Take pork out of the skillet and keep warm. Pour cornstarch mixture into skillet; stir and cook until thickened. Drizzle sauce over pork before serving.
