Transform pork stew with rich peanut flavors for a cozy family favorite.
Ingredients:
  • 41.60 gm smooth peanut butter
  • 36.40 gm light olive oil
  • 1.25kg pork shoulder, cut into 3cm pieces
  • 1 brown onion, chopped
  • 20.00 gm sweet paprika
  • 69.38 gm tomato paste
  • 1/2 tsp cayenne pepper
  • 600g orange sweet potato, peeled, cut into 5cm pieces
  • 510.00 gm chicken style liquid stock
  • 2 dried bay leaves couscous, to serve
Instructions:
  • Preheat oven to 130°C. In a large, heavy flameproof casserole dish, heat oil over medium-high heat. Sear pork in three batches until browned, about 4 minutes each. Transfer each batch to a bowl before repeating with the remaining pork.
  • Sauté onion in a pan until soft, about 5 minutes. Add garlic and cook for 1 minute. Stir in paprika and tomato paste, continue cooking for 2 minutes.
  • Place the pork back in the pan, then mix in pepper, sweet potato, stock, peanut butter, and bay leaves. Season with salt and ground white pepper. Stir well and bring to a boil. Cover tightly with a lid and bake for 2 1/2 hours until the pork is tender. Finally, remove and discard the bay leaves and serve with couscous.
