Pork with pears and prosciutto

Enhance this tasty pork dish with steamed vegetables for a satisfying meal.
Ingredients:
  • 8 pork medallions or 4 pork butterfly steaks, trimmed
  • 20g unsalted butter
  • 2 corella pears, skin on, cored and sliced
  • 40.80 gm chicken style liquid stock
  • 42.00 gm apple juice
  • 4 slices prosciutto, cut into thick strips
  • 2 tsp rosemary leaves
  • salt and pepper
Instructions:
  • Warm a touch of olive oil in a spacious non-stick skillet over medium-high heat.
  • Sear the pork in batches for 3-4 minutes until golden and cooked as desired. Keep warm by transferring to a plate and covering with foil.
  • Turn up the heat to high and melt the butter. Cook the pear for 2 minutes. Pour in the chicken stock and apple juice, then simmer for 3 more minutes. Stir in the prosciutto, rosemary, salt, and pepper, and cook for an additional 2-3 minutes.
  • Plate the pork, then add the pears, prosciutto, and a drizzle of pan juices. Optionally, serve with steamed vegetables.
