Prosciutto pork with maple pears

Home-cooked meal, quick and delicious, beats takeout any day.
Ingredients:
  • 4 slices prosciutto
  • 8 sage leaves
  • 4 (about 600g) pork scotch fillet steaks
  • 20g butter
  • 2 packham pears, cut into wedges
  • 60ml maple syrup
  • 40.00 ml white wine vinegar
  • 36.40 gm extra virgin olive oil
  • 5.90 gm Dijon mustard
  • 1 bunch rocket, trimmed, coarsely torn
  • 55g walnut
  • Shaved parmesan, to serve
Instructions:
  • Lay out the prosciutto slices on a tidy work area. Add a layer of fragrant sage leaves. Encircle each pork steak with the prosciutto and fasten with a toothpick. Sprinkle with salt and pepper to taste.
  • 1. Preheat a large frying pan over high heat. Sear the pork for 2-3 minutes on each side until desired doneness. Plate the pork, cover loosely with foil, and let it rest for 5 minutes before serving.
  • Meanwhile, melt the butter in the pan over medium heat. Cook the pears for 2 minutes on each side until they are lightly caramelized. Drizzle with maple syrup and cook for an additional 1 minute until the pears are caramelized. Remove from heat.
  • Combine the vinegar, oil, and mustard in a screw-top jar and shake vigorously. Next, in a large bowl, mix the rocket, walnuts, and parmesan then drizzle with the dressing. Gently toss everything together until well combined.
  • Arrange the rocket salad and pork on plates, top with the pears, and serve right away.
