Indulge in a modern twist on classic roast pork with sweet maple pears.
Ingredients:
  • 23.40 gm wholegrain mustard
  • 1kg piece pork neck (scotch)
  • 4 slices prosciutto
  • 9.20 gm olive oil
  • 1 tub stock pot chicken
  • 375.00 gm boiling water
  • 1 bulb garlic, halved crossways
  • 2 medium red onions, cut into wedges
  • 3 medium corella pears, halved
  • 20.00 ml shredded fresh sage leaves
  • 84.38 gm maple syrup
  • Fresh sage leaves, to serve
Instructions:
  • 1. Preheat your oven to a toasty 200°C/180°C fan-forced and get ready to make magic happen. 2. Smear some zesty mustard over the pork like an artist at work. Embrace the pork with a cozy prosciutto blanket, ensuring a slight overlap. 3. Nestle your beautifully adorned pork in a roasting pan and shower it with a delightful drizzle of oil. 4. Sprinkle some freshly ground pepper over the masterpiece for that extra touch of flavor. 5. Let the oven work its charm for 30 minutes until perfection is achieved.
  • Lower the oven temperature to 150°C/130°C fan-forced. Pour the boiling water from the stock pot into the pan. Add garlic, onion, and pear, then sprinkle with shredded sage and drizzle with maple syrup. Cover with foil and roast for 2 1/2 hours until the pork is tender.
  • Slice the succulent pork and elegantly present it alongside fragrant garlic, onion, sweet pear, pan juices, and a sprinkle of fresh sage leaves for a delightful and flavorful dish.
