Indulge in pork wonton soup - a flavorful, savory broth with tender dumplings.
Ingredients:
  • 2040.00 gm chicken style liquid stock
  • 1cm piece ginger, peeled, thinly sliced
  • 4 small iceberg lettuce leaves, halved
  • 2 green onions, thinly sliced
  • 3 dried shiitake mushrooms
  • 200g pork mince
  • 1 green onion, finely chopped
  • 4 water chestnuts, finely chopped
  • 21.00 gm soy sauce
  • 2.50 gm caster sugar
  • 10.00 gm cornflour
  • Pinch of white pepper
  • 24 wonton wrappers
Instructions:
  • Prepare the mushrooms: Place them in a small heatproof bowl and cover them with boiling water. Let them stand for 15 minutes, then drain and squeeze out any excess liquid. Trim and discard the stems, then finely chop the mushrooms.
  • Combine mushrooms, pork, onion, water chestnuts, soy sauce, sugar, and cornflour in a bowl. Season with salt and white pepper, then mix thoroughly.
  • Lay a wonton wrapper on a clean surface. Add a heaping teaspoon of pork mixture in the center. Moisten the edges with water. Fold the wonton to create a triangle, pressing the edges together. Fold the base corners of the triangle up and around the filling, pressing to seal. Repeat the process with the remaining wrappers and pork mixture.
  • In a large saucepan, quickly bring stock and ginger to a boil over high heat. In another large saucepan, bring water to a boil over high heat, then reduce to medium. Cook wontons in batches in the water for 3 to 4 minutes until pork is cooked through and wontons float. Use a slotted spoon to transfer them to a bowl, and cover to keep warm.
  • Add the lettuce to the boiling stock right before serving. Cook for 30 seconds or until just wilted. Divide the wontons between serving bowls, then ladle over the stock and lettuce. Sprinkle with onions before serving.
