Hearty pork wonton soup with steamed vegetables - delicious and satisfying.
Ingredients:
  • 1 tablespoon rice wine
  • 0.5 teaspoon cornstarch
  • 0.75 pound ground pork
  • 2 tablespoons finely chopped green onion (white and light green parts)
  • 1 tablespoon soy sauce
  • 1 teaspoon minced fresh ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon white sugar
  • 25 wonton wrappers
  • 3 heads bok choy, sliced
  • 10 sugar snap peas, sliced
  • 1 carrot, thinly sliced
  • 2 cups chicken broth
  • 1 cup water
  • 0.25 cup finely chopped green onion (white and light green parts)
Instructions:
  • Combine rice wine and cornstarch in a large bowl and whisk. Add ground pork, 2 tablespoons of green onion, soy sauce, ginger, sesame oil, and sugar. Mix thoroughly until well combined and until texture becomes paste-like, approximately 10 minutes. Cover and chill in the refrigerator for 1 hour.
  • Take a tablespoon of the pork mixture and put it in the center of a wonton wrapper. Brush the edges with beaten egg and press to seal, forming a small pouch. Repeat with the rest of the wrappers and mixture. Chill in the refrigerator until needed.
  • Prepare a steamer by placing it in a saucepan and adding water until it reaches just below the steamer. Bring the water to a boil. Add bok choy, snap peas, carrot, and 2 tablespoons of green onion. Cover and steam until tender, which should take between 2 to 6 minutes. Serve the vegetables evenly among 4 soup bowls.
  • Steam the wontons in a steamer basket for about 10 minutes until the pork is fully cooked. Serve in soup bowls with vegetables.
  • In a saucepan, gently warm the chicken broth and water for 5 to 7 minutes. Divide the hot broth evenly into soup bowls over the vegetables and wontons, then top each bowl with 1/4 cup of chopped green onion for a flavorful finish.
