Mouthwatering portabella mushroom and spinach sandwich with basil, yellow bell pepper, and zesty sauce.
Ingredients:
  • 1 tablespoon butter
  • 0.25 cup chopped red shallots
  • 2 tablespoons chopped fresh basil leaves
  • 1 tablespoon minced fresh garlic
  • 1 teaspoon hot paprika
  • 1 teaspoon freshly ground black pepper
  • salt to taste
  • 1 cup fresh spinach leaves
  • 0.25 cup diced portabella mushroom caps
  • 0.25 cup diced yellow bell pepper
  • 1 tablespoon sweet Jamaican pepper sauce (such as Pickapeppa Sauce ®)
  • 1 tablespoon balsamic vinegar
  • 1 (8 inch) hoagie roll, split lengthwise
Instructions:
  • In a skillet with a lid, melt butter over medium heat. Cook shallots, basil, and garlic until fragrant, about 1 minute. Season with paprika, black pepper, and salt. Add spinach, mushrooms, and bell pepper. Cover and simmer on medium-low heat until vegetables are tender and liquid is released, about 4 minutes.
  • Uncover the skillet and introduce pepper sauce and balsamic vinegar. Raise the heat to medium and simmer the mixture until it slightly thickens, approximately 2 minutes.
  • Top warm, savory mushroom mixture generously onto a freshly split hoagie roll. Enjoy immediately.
