Elevate traditional baked beans on toast into a gourmet delight for your family to enjoy.
Ingredients:
  • 250g dried cannellini beans, soaked in cold water overnight, drained
  • 185ml olive oil
  • 1 onion, finely chopped
  • 5 garlic cloves, chopped
  • 2 tsp thyme leaves, chopped
  • 23.40 gm wholegrain mustard
  • 60g brown sugar
  • 60ml cider vinegar
  • 20.00 gm curry powder
  • 600ml Mutti Tomato Passata
  • 44.40 gm sun-dried tomato paste
  • 600ml vegetable liquid stock
  • 125.00 ml flat-leaf parsley leaves
  • Toast, to serve
  • Butter, to serve
Instructions:
  • In a pan, cover beans with cold water and bring to a boil. Reduce heat and simmer gently for 45 minutes, or until beans are tender.
  • In a pan over low heat, warm up 1/2 cup (125ml) oil. Add onion, garlic, and thyme, and stir until softened, about 2-3 minutes.
  • Add beans to pan along with mustard, sugar, vinegar, curry powder, tomatoes, passata, tomato paste, and stock. Simmer and cook for 45 minutes, stirring occasionally, until beans are tender.
  • Heat the remaining 1/4 cup (60ml) oil in a frypan over high heat. Fry parsley until crisp, about 20 seconds. Drain on paper towel.
  • Season the beans generously and serve alongside toasted bread, adding a dollop of butter and crispy fried parsley leaves.
