Succulent Caribbean-inspired pot roast.
Ingredients:
  • 1 (3 pound) boneless beef chuck roast
  • 2 cloves garlic, crushed
  • 1 cup chopped onion
  • 2 (8 ounce) cans tomato sauce
  • 1 tablespoon all-purpose flour
  • 1 teaspoon unsweetened cocoa powder
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.25 teaspoon ground cinnamon
  • 1 teaspoon grated orange zest
  • 2 large potatoes, cut into large chunks
  • 3 carrots, sliced
  • 1 stalk celery, chopped
  • 0.5 cup sliced almonds
Instructions:
  • In a large skillet over medium-high heat, heat the oil until shimmering. Sear the roast on all sides until golden brown. Transfer the roast to a slow cooker.
  • Sauté garlic and onions in the skillet with the meat drippings until tender. Mix in the salt and tomato sauce. Blend sugar, flour, cocoa powder, chili powder, oregano, cumin, coriander, cinnamon, and orange zest, then add to the tomato sauce. Pour over the roast in the slow cooker, along with potatoes, carrots, and celery. Cook on Low for 6 to 8 hours until meat is tender. Sprinkle with sliced almonds as garnish before serving.
