Cozy potato, bacon, and fennel soup elevated by fragrant Chinese five-spice in just 7 simple ingredients.
Ingredients:
  • 3.5 cups diced peeled potatoes
  • 6 strips bacon
  • 2 tablespoons butter
  • 1.5 bulbs fennel, chopped
  • 5 cups vegetable stock
  • 1 teaspoon Chinese five-spice powder, or more to taste
Instructions:
  • In a large pot, add potatoes and cover with salted water. Bring to a boil, then simmer on medium-low heat until potatoes are just tender, about 10-15 minutes.
  • While the bacon is cooking in a deep skillet over medium-high heat for about 10 minutes until evenly browned, remember to turn occasionally. Once cooked, drain the bacon slices on paper towels and save roughly 2 tablespoons of the drippings in the skillet. Don't forget to drain the potatoes.
  • In a skillet, combine butter and bacon drippings and melt together. Cook fennel over medium heat until browned, about 12 minutes. Crumble the bacon and add to the skillet along with vegetable stock, potatoes, and Chinese five-spice. Bring to a boil, then simmer and season with salt and pepper.
  • Carefully pour 1 1/2 cups of the soup into a blender. Secure the lid and pulse a few times before blending thoroughly. Pour the mixture back into the pot and let it simmer for 45 minutes to 1 hour to meld the flavors. Season with five-spice, salt, and pepper to taste. Enjoy!
