Potato, pea and mint parcels

Effortlessly delicious bag-cooked potato side dish.
Ingredients:
  • 63.75 gm chicken style liquid stock or water
  • 63.13 gm thickened cream
  • 16 chat potatoes
  • 250.00 ml frozen peas
  • 4 green onions, sliced
  • 4 sprigs fresh mint
Instructions:
  • Preheat the oven to 200C while you prepare four 30cm x 40cm pieces of non-stick baking paper. In a jug, combine the stock and cream.
  • Toss together potatoes, peas, onion, and mint in a bowl. Divide the potato mixture evenly onto each piece of baking paper. Top each with a generous drizzle of the cream mixture.
  • Fold the edges of the paper and crimp to seal (to prevent any liquid from leaking out), creating a parcel. Place the parcels on a baking tray and bake for 45 minutes, or until the potatoes are tender. Enjoy with barbecued lamb.
