Delicious potato and ham chowder with bacon and melted Cheddar cheese on top.
Ingredients:
  • 1 pound bacon, cut into 1-inch pieces
  • 1 pound cubed fully cooked ham
  • 1 small white onion, diced
  • 6 cups fat-free milk
  • 2 (10.75 ounce) cans condensed cream of potato soup
  • 4 cups frozen Southern-style hash brown potatoes
  • 1.5 teaspoons garlic salt
  • 1 teaspoon ground black pepper
  • 2 cups shredded sharp Cheddar cheese
Instructions:
  • In a large pot over medium-high heat, combine bacon and ham, stirring occasionally until bacon fat starts to render, for about 7 to 10 minutes. Next, add the onion and cook until bacon and ham are golden brown, and the onion turns translucent, for an additional 5 to 7 minutes.
  • In a pot, combine milk, potato soup, potatoes, garlic salt, and pepper. Simmer over medium-low heat, stirring often, until heated through and slightly thickened, around 20 minutes.
  • Serve the soup in bowls garnished with Cheddar cheese and green onions.
