Potato & horseradish mash

Light and creamy guilt-free mashed potatoes.
Ingredients:
  • 4 (about 750g) desiree potatoes, peeled, quartered
  • 3 (about 500g) parsnips, peeled, chopped
  • 125ml (1/2 cup) warm skim milk
  • 18.80 gm extra light sour cream
  • 1 1/2 tsp horseradish cream
Instructions:
  • Boil potatoes and parsnips in a pot of salted water for 20 minutes or until tender. Drain and place back in the pot.
  • Combine the milk, sour cream, and horseradish in the pan, then mash until creamy. Season with salt and pepper, transfer to a serving bowl, and enjoy!
