Steak Diane with horseradish mash

Ingredients:
  • 6 sebago potatoes (see note), peeled, roughly chopped
  • 100g butter
  • 189.38 gm thickened cream
  • 2 tsp horseradish cream
  • 4 (x150g) beef minute steaks
  • 41.60 gm tomato sauce
  • 24.40 gm worcestershire sauce
  • Steamed broccolini, to serve
Instructions:
  • In a large saucepan, cook the potatoes in boiling water for 20 minutes until tender. Drain and return to the saucepan. Mash them roughly and mix in 50g butter and 1/2 cup thickened cream until smooth. Stir in horseradish cream and season with salt and pepper. Keep covered to retain warmth.
  • Season the steaks generously with salt and pepper. In a large, heavy-based frying pan over medium-high heat, melt the remaining 50g of butter. Sear the steaks in batches for 1 minute on each side. Transfer the steaks to a plate and cover with foil to keep them warm.
  • Bring the heat down to medium. Pour in tomato sauce, Worcestershire sauce, and the remaining 1/4 cup of cream. Let it simmer for 1 to 2 minutes until the sauce thickens slightly. Season with pepper to taste.
  • Plate the spooned mashed potatoes, layer with the deliciously cooked steak, drizzle with the delectable sauce, and serve alongside vibrant broccolini.
