Steak diane with garlic pea mash

Ingredients:
  • 4 medium desiree potatoes, peeled, cut into 2cm pieces
  • 250.00 ml frozen peas
  • 41.20 gm skim milk
  • 2 garlic cloves, crushed
  • olive oil cooking spray
  • 4 (100g each) beef minute steaks
  • 255.00 gm beef stock
  • 130.00 gm tomato sauce
  • 48.80 gm worcestershire sauce
  • salad, to serve
Instructions:
  • In a large saucepan, combine potatoes and cover with cold water. Bring to a boil over medium-high heat and cook uncovered for about 15 minutes until potatoes are tender. Stir in peas and boil for an additional 2 minutes. Drain and return to the pan. Mash the potatoes and mix in milk and half of the garlic. Season with salt and pepper to taste.
  • Heat a large frying pan over medium-high heat. Spray steaks with oil and season with salt and pepper. Add to the hot pan and sear each side for 1 minute for medium doneness or to your preferred level. Transfer the steaks to a plate and cover with foil to keep warm.
  • Lower the heat to medium and introduce the stock, tomato sauce, worcestershire sauce, and the rest of the garlic into the pan. Season with pepper and simmer for 4 to 5 minutes, stirring occasionally, until the sauce slightly thickens.
  • Scoop mashed potatoes onto plates. Place steak on top and drizzle with sauce. Serve alongside a fresh salad.
