Impress at the barbecue with a crowd-pleasing classic: potato bake.
Ingredients:
  • Melted butter, to grease
  • 250ml (1 cup) pouring cream
  • 125ml (1/2 cup) milk
  • 1 small brown onion, thinly sliced into rings
  • 1kg brushed potatoes, peeled, thinly sliced
  • 80g (1 cup) coarsely grated cheddar
Instructions:
  • Preheat your oven to 180ºC. Brush a 1.75L (7-cup) baking dish with melted butter. In a saucepan over medium heat, combine cream, milk, and onion and cook until nearly boiling for 3-4 minutes. Remove from heat, season with salt and pepper, and let it cool for 10 minutes. Then transfer the onion to a plate.
  • Layer one-third of the potato slices in an overlapping pattern on the base of the dish. Sprinkle one-third of the onion and one-third of the cheddar over the potatoes. Repeat this layering process with the remaining potato, onion, and cheddar.
  • Blanket the cream mixture over the dish and nestle it on a baking tray. Let it bake for 1 hour until the potato becomes tender with a crisp, golden top. Allow it to rest for 10 minutes to cool slightly before enjoying.
