Creamy au Gratin Potatoes

Cheesy Cheddar potato bake with layers of tender potatoes and onions, baked until golden and creamy.
Ingredients:
  • 4 medium russet potatoes, thinly sliced
  • 1 medium onion, sliced into rings
  • salt and ground black pepper to taste
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 0.5 teaspoon salt
  • 2 cups milk
  • 1.5 cups shredded Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously butter a 1-quart casserole dish.
  • Begin by arranging half of the potatoes at the base of the casserole dish and season with salt and pepper. Place a layer of onion slices on top, followed by the remaining potatoes. Sprinkle another round of salt and pepper for seasoning.
  • In a saucepan over medium heat, melt butter. Whisk in flour and salt, cooking until raw flour flavor is gone, about 1 minute. Gradually add milk, whisking well after each 1/4 cup addition to keep your sauce smooth.
  • Whisk the mixture constantly until thickened, for 3 to 5 minutes. Add the cheese all at once and stir until melted, for 30 to 60 seconds. Pour the cheesy sauce over the potatoes, then cover the dish with aluminum foil.
  • Roast in the preheated oven until the potatoes are tender and the sauce is bubbling, approximately 1 ½ hours.
