Ingredients:
  • 4 russet potatoes, sliced into 1/4 inch slices
  • 1 onion, sliced into rings
  • 3 tablespoons butter
  • 0.25 cup all-purpose flour
  • 0.5 teaspoon salt
  • 2 cups low-fat (1%) milk
  • 1.5 cups shredded reduced-fat Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and give a gentle buttering to a 1-quart baking dish.
  • Start by delicately arranging half of the potatoes at the base of the baking dish. Layer with the fragrant onion slices, then gracefully place the rest of the potatoes on top.
  • Season the potatoes generously with salt and pepper.
  • In a saucepan over medium heat, melt butter. Add flour and salt, whisking constantly for 1 minute. Pour in milk and cook until thickened. Stir in Cheddar cheese until melted, for about 30 to 60 seconds.
  • Drizzle the creamy cheese sauce over the tender potatoes, then tightly cover the dish with foil for ultimate flavor infusion.
  • Bake until the cheese sauce is bubbling and the potatoes are tender, which should take about 1 1/2 hours in the preheated oven.
