Healthier rice pudding made with brown rice and low-fat milk. Creamy favorite dessert.
Ingredients:
  • 1.5 cups water
  • 0.75 cup uncooked brown rice
  • 2 cups low-fat milk, divided
  • 0.33333334326744 cup white sugar
  • 0.25 teaspoon salt
  • 1 large egg, beaten
  • 0.66666668653488 cup raisins
  • 1 tablespoon butter
  • 0.5 teaspoon vanilla extract
Instructions:
  • In a saucepan, bring water and rice to a boil over high heat. Cover, reduce heat to medium-low, and simmer until tender, about 45 minutes.
  • In a clean saucepan, mix cooked rice with 1 1/2 cups of milk, sugar, and salt. Cook over medium heat until thick and creamy, about 15 to 20 minutes.
  • Mix in the remaining 1/2 cup of milk, beaten egg, and raisins. Cook for an additional 2 minutes while stirring continuously. Take off the heat and blend in the butter and vanilla. Serve while still warm.
