Indulge in a decadent twist on classic au gratin potatoes by layering thinly sliced potatoes, pumpkin, Gruyere cheese, and a touch of thyme for a sophisticated and flavorful side dish.
Ingredients:
  • 8 ounces baby yellow potatoes
  • 8 ounces pie pumpkin
  • 1 teaspoon butter
  • 1.5 cups shredded Gruyere cheese
  • 0.5 teaspoon dried thyme
  • salt and ground black pepper to taste
  • 1 cup half-and-half
  • nonstick aluminum foil
Instructions:
  • Preheat the oven to 375°F (190°C) and generously grease a 1-quart casserole dish.
  • Thinly slice the potatoes and pumpkin using a mandolin set to 3-millimeters thickness setting.
  • Start by arranging half of the pumpkin slices at the base of the casserole dish. Sprinkle with salt, pepper, a quarter of the thyme, and a quarter of the Gruyere. Layer with half of the potato slices, season with salt, pepper, another quarter of the thyme, and another quarter of the Gruyere. Repeat with pumpkin and potato layers, ensuring all seasoning and Gruyere is used.
  • Evenly drizzle the half and half over the top and cover with aluminum foil.
  • Preheat the oven and bake for 45 minutes. Uncover and bake for an additional 15 minutes until the potatoes are tender and the top is golden brown. Rest for 15 minutes before serving.
