Satisfy all tastes with this flavorful rocket and potato salad combo.
Ingredients:
  • 1.5kg small Lady Christl potatoes (see note)
  • 300ml light sour cream
  • 80ml (1/3 cup) white wine vinegar
  • 35.10 gm wholegrain mustard (see note)
  • 14.40 gm honey
  • 90g (3/4 cup) walnuts
  • 1 bunch rocket, trimmed, leaves torn
Instructions:
  • Boil the potatoes in a large saucepan of water for 15-20 minutes until tender. Then, rinse them under cold water, drain, and slice into 1.5cm-thick slices.
  • Combine smooth sour cream, tangy vinegar, bold mustard, and sweet honey in a bowl, whisk until well mixed. Season with a pinch of salt and a dash of pepper to enhance flavors.
  • Preheat the oven to 180°C. Spread walnuts on a baking tray and bake for 5 minutes until toasted. Mix together potato, walnuts, and rocket in a serving bowl. Drizzle dressing over the salad.
