Lean chicken sausages paired with zesty potato salad for a flavorful twist.
Ingredients:
  • 12 (about 500g) chats (baby coliban) potatoes, quartered
  • 8 slices prosciutto
  • 8 (about 500g) chicken sausages
  • 4 celery sticks, ends trimmed, thinly sliced diagonally
  • 4 green shallots, ends trimmed, thinly sliced
  • 80g baby rocket leaves
  • 85g (1/4 cup) good-quality whole-egg mayonnaise
  • 37.60 gm low-fat sour cream
  • 23.40 gm wholegrain mustard
  • 40.00 ml chopped fresh tarragon
Instructions:
  • Preheat the grill on high. Boil the potato in salted water for 10 minutes until tender. Rinse with cold water and drain.
  • Place the prosciutto on a baking tray and grill for 2 minutes until crisp. Remove and roughly chop. Grill the sausages for 10 minutes until golden brown and fully cooked.
  • Combine the potato, prosciutto, celery, shallot, rocket, mayonnaise, sour cream, mustard, and tarragon in a large bowl, gently toss to mix. Season with salt and pepper to taste.
  • Divide the potato salad onto serving plates and enjoy with chicken sausages.
